- 1 pound (450 grams) fresh asparagus, trimmed
- 1/2 cup panko breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 large eggs
- Olive oil spray (or any cooking spray)
Set Up Breading Station
In one bowl, whisk the eggs.
In another bowl, mix the panko breadcrumbs, grated Parmesan cheese, garlic powder, salt, and black pepper.
Bread the Asparagus
Dip each asparagus spear into the egg mixture, allowing any excess to drip off.
Then coat the asparagus in the breadcrumb mixture, pressing gently to adhere.
Air Fry the Asparagus
Lightly spray the air fryer basket with olive oil spray.
Place the breaded asparagus spears in a single layer in the basket. Do not overcrowd; you may need to cook in batches.
Lightly spray the tops of the asparagus with more olive oil spray.
Air fry for 8-10 minutes, or until golden brown and crispy. Shake the basket halfway through to ensure even cooking.
Serve
Once cooked, remove the asparagus from the air fryer and let them cool slightly on a baking sheet.
Serve immediately with your favorite dipping sauce, if desired.
