Ingredients

Instructions

  • Place the peppers on a baking sheet, skin side up, and roast for 20-30 minutes until the skins are charred and blistered.
  • Remove from the oven and place in a bowl, covering with plastic wrap. Let steam for 10 minutes.
  • Peel off the skins and set the roasted peppers aside.

Blend the Ingredients

  • In a blender or food processor, combine the roasted red peppers, Greek yogurt, olive oil, smoked paprika, garlic powder, onion powder, salt, black pepper, and lemon juice.
  • Blend until smooth and creamy. If using, add the adobo sauce and blend again to incorporate.
