Ingredients

  • 3 cloves garlic, minced
  • 1 inch piece of ginger, peeled and minced
  • 2 cups chopped vegetables (carrots, mushrooms, spinach, or bok choy)
  • 2 tbsp soy sauce
  • 1 tbsp miso paste (optional)
  • 1 teaspoon sesame oil (optional)
  • Salt and pepper to taste
  • 2 green onions, sliced (for garnish)

Instructions
 

Prepare the Ingredients

  • Cut the tofu into 1-inch cubes and set aside.
  • Dice the onion, mince the garlic and ginger, and chop the vegetables.

Sauté Aromatics (optional step for enhanced flavor)

  • Heat the vegetable oil in a large pot over medium heat.
