Ingredients
  

  • 2 medium sweet potatoes (about 500g), peeled and diced
  • 1 cup vegetable broth
  • 1/2 cup coconut milk or heavy cream
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tbsp ground cumin
  • 1 tbsp smoked paprika
  • 1/2 tbsp ground cinnamon
  • Salt and pepper to taste
  • 1 tbsp lemon juice
  • Fresh parsley or cilantro for garnish (optional)

Instructions
 

Prepare the Sweet Potatoes

  • Peel and dice the sweet potatoes into small cubes for faster cooking.

Cook the Aromatics

  • In a medium saucepan, heat the olive oil over medium heat.
  • Add the finely chopped onion and sauté until translucent, about 5 minutes.
  • Add the minced garlic and cook for another minute until fragrant.

Cook the Sweet Potatoes

  • Add the diced sweet potatoes to the saucepan.
  • Pour in the vegetable broth and bring to a boil.
  • Reduce the heat to a simmer and cook until the sweet potatoes are tender, about 15 minutes.

Blend the Sauce

  • Transfer the sweet potato mixture to a blender or food processor.
  • Add the coconut milk (or heavy cream), ground cumin, smoked paprika, ground cinnamon, salt, pepper, and lemon juice.
  • Blend until smooth and creamy. If the sauce is too thick, add more broth or coconut milk until you reach the desired consistency.

Adjust Seasoning

  • Taste and adjust the seasoning with additional salt, pepper, or spices as needed.

Serve

  • Pour the sauce over your dish of choice or serve it on the side.
  • Garnish with fresh parsley or cilantro if desired.
