- 200 grams of rice noodles or soba noodles
- 6 cups of vegetable broth
- 2 cups of water
- 1 cup of sliced mushrooms (shiitake or button mushrooms)
- 1 cup of chopped bok choy
- 1 carrot, julienned
- 3 green onions, sliced
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon miso paste (optional)
