- 2 lbs (about 1 kg) potatoes (Russet or Yukon Gold), peeled and quartered

Instructions
- Boil Potatoes: Place peeled and quartered potatoes in a large pot and cover with water. Bring to a boil and cook until potatoes are tender, about 15-20 minutes.
