Ingredients:

  • 1 (8-10 lb) bone-in ham
  • 1 cup honey
  • 1/2 cup brown sugar (packed)
  • 1/4 cup Dijon mustard
  • 1/4 cup apple cider vinegar or balsamic vinegar
  • 1/4 cup orange juice (optional for a citrus twist)
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1/2 tsp ground ginger
  • 1/2 tsp ground mustard (optional)
  • 1 tbsp cornstarch (optional, for thickening)
  • Salt and black pepper to taste

Instructions:

  1. Preheat Oven & Prep the Ham: Preheat your oven to 325°F (165°C). Place the ham on a roasting rack in a large roasting pan. If the ham has a thick rind, score it in a diamond pattern with a sharp knife, being careful not to cut too deeply into the meat.
  2. Make the Glaze: In a medium saucepan over medium heat, combine honey, brown sugar, Dijon mustard, vinegar, orange juice (if using), cinnamon, cloves, ginger, and mustard powder. Stir occasionally until the sugar dissolves, and the mixture begins to bubble. Let it simmer for 5-10 minutes, stirring frequently until it thickens slightly. If you want a thicker glaze, dissolve the cornstarch in a little cold water and add it to the glaze, cooking for an additional 2 minutes.
  3. Roast the Ham: Brush the glaze over the ham, making sure to coat it evenly. Tent the ham loosely with aluminum foil and place it in the oven. Roast the ham for about 15 minutes per pound, basting every 30 minutes with more glaze. During the last 30 minutes, remove the foil and continue to cook to allow the glaze to caramelize and form a nice crust.
  4. Rest & Slice: Once the ham reaches an internal temperature of 140°F (60°C), remove it from the oven. Let it rest for 15-20 minutes before slicing to allow the juices to redistribute.
  5. Serve: Slice the ham and drizzle with any remaining glaze from the pan. Serve hot and enjoy the sweet and savory flavors.
